Back in the days of high fat living, many moms had their stand bys for each day of the week. Meat loaf on Monday. Chicken on Tuesday. Spaghetti and meatballs on Wednesday, and so on. Not much variety, but these reliable, familiar recipes were easy to prepare.

Well, the fat focus has changed and more people are becoming serious about being a calorie counter. And with these new realities the nature of the stand by meal has. But there is still a lot to be said for reliable stand bys that you can count on. What follows are substitutes for the old high-fat and high calorie main courses, side dishes and even desserts. To keep these standbys from getting stale, add new spices to keep the tastes interesting. All of these meals are fast, easy and delicious – and very low in fat.

Pizza and Pita-za Specials

Many grocery stores now carry whole wheat pita breads and traditional and whole grain Italian focaccia flat-breads, They’re especially easy to store in your freezer since they lie flat and take up little space, With these you can whip up home-made pizza any time, with less fat and calories than a to go meal from the neighborhood pizzeria.

In fact, making lean pizza takes less time than a pizza delivery.

To make a pita-bread pizza, for example, set the oven at 350 degrees Fahrenheit and bake the pita until it’s slightly crisp, Add tomato sauce, chopped vegetables and seasonings and then bake briefly until the add ons are heated through. You’ll add tasty variations such as low-fat cheese, but basically, that is all there is to it.

Premier Pasta with Variations

Pasta is a popular fast dinner. But to keep it from turning into the same old thing, try mixing and matching pastas, sauces and toppings. Keep different pasta varieties on hand: traditional and whole grain spaghetti, linguine, rotini and wagon wheels for kids.

A simple tomato sauce, whether store brought or homemade, is easy to modify and spark up with new flavors. Add leftovers – cooked chicken or seafood, tofu or a soy-based ground beef substitute, cooked beans, vegetables, fresh herbs, onions and garlic. And with a bit of skim milk or evaporated skim milk you can transform a traditional tomato sauce into a creamy red sauce.

Almost Instant Pilaf

A pilaf has very simple ingredients, all low-fat and nutritious, so you can create an Eastern style, exotically flavored meal in record time.

Saute some onions and garlic, then add a quick cooking grain like instant brown rice or pearled barley, chicken or vegetable broth and a few pinches of herbs. Simmer until the grains are cooked, then sprinkle with finely grated orange or lemon rind.

Oriental Expressions

For another great fast meal option, cook or reheat some brown rice, add Chinese or soba (buckwheat) noodles and top with quickly sauteed vegetables and some chicken, tofu, seafood or legumes and low sodium soy or teriyaki sauce.

Rapid Bake Poultry

You can broil skinless chicken or turkey breasts in just a few minutes, made almost instantly you have the foundation of a fast low-fat and low-calorie meal.

The side dishes for this meal do not take that much longer. It takes a total of five minutes to make couscous and about the same amount of time to steam vegetables. Serve with a tossed salad made with low-fat on nonfat salad dressing and some whole grain bread, and you have a very complete meal in under 30 minutes.

Being a calorie counter and having a low-fat and low-calorie diet doesn’t mean taking hours in the kitchen. It also doesn’t mean cutting down on variety for ease and quickness in preparation of meals. These handful of healthy stand by meals are just the beginning. See how many variations you can come up with.

Creating meals for children can be a task. Knowing what your child likes to eat and being able to offer them healthy meals based on their preferences can be difficult at times. Likewise, making sure that your child has healthy nutritious meals and snacks each day can be very easy to do if you are willing to be creative with your child’s meals and offer them a variety of healthy options at meal or snack time.  

One of the biggest difficulties for a parent is making sure that their children have healthy snacking options. In a world where salty chips, greasy French fries and sweet pastries are supreme it can be pretty hard to convince you child that healthy fruits and vegetables are better as snacking options. There are a number of healthy snack options that are sure to please your child. Slicing veggies such as carrots and celery and dipping them in peanut butter is a nice snack.

Fresh fruit is always a great option. Keeping a little snack bag with apple slices, orange sections or bunches of grapes readily available for your child is advisable. If possible place fruit and veggies in small containers on your kitchen table for your child to eat whenever he or she wants to. Introducing your child to healthy snacking options at an early age will ensure that they understand that fruits and veggies are good and delicious to eat.  

Making sure that your children eat balanced meals everyday is important. Children need a significant amount of vitamins and minerals during their younger years because they have growing bodies that demand nourishment. Breakfast is the most important meal of the day because it provides a significant amount of energy to begin one’s day. This is especially true for school aged children. Make sure your child has a decent breakfast that includes some form of whole grain and protein source. Lunch can be difficult to monitor if you have school aged children. Many schools are trying to provide healthier school lunch options for students. If you are concerned about the quality of school lunch at your child’s school you can always pack you child’s lunch. When children arrive home from school make sure there are healthy snacking options in your fridge as children usually need a snack to hold them over until dinner. Dinner should be well balanced and the portions size appropriate. Dinner should include a lean protein source, vegetables and a whole grain if possible.  

In providing healthy snacks and meals it is important to remember that children will be children and letting them have the occasional sweet treat is okay. The saying everything in moderation definitely applies to letting your children indulge in goodies. If you are someplace like an amusement park obviously you child will want the traditional amusement park fair such as cotton candy, hot dogs and sodas. As a parent you must monitor what you child consumes and how much he or she consumes. An ice cream cone once in a while won’t cause obesity. Practicing moderation and making the consumption of healthy foods a priority will provide your child with a healthy foundation.

For all the globetrotting vegetarians out there, a visit to Thailand between the months of September and October is ripe. The first new moon after the autumn equinox is a festive time in Thailand. This is the time they celebrate the annual Vegetarian Festival.  For nine straight days, Thailand turns into a vegetarian haven.

Thailand is a largely a Buddhist country that many foreigners think that Thais are vegetarians. Buddhism teaches its believers not to harm all living things but this does not stop most Thais from eating all kinds of meat. It seems that most Thais would rather pay for their karmic debt than not to eat their favorite meat dishes.  Any meat dish given to Thai monks is a cause for concern. A monk should not refuse any food given to him.

The Thai Vegetarian Festival had its roots in China. The festivity is also observed in other Southeast Asian countries like Malaysia and Singapore.  The festival is not only about indulging in vegetarian dishes but more importantly a time for physical and ritualistic cleansing of one’s self in honor of Kwan Yin, the Goddess of Compassion in Buddhism.

Not all vegetarians are Buddhists and not all Buddhists are vegetarians.  Being a vegetarian is a choice.

If thought of carefully, being a vegetarian is actually a healthy choice. However for most Thais, vegetarianism is only observed for the duration of the Vegetarian Festival.

Restaurants and food stalls change or tweak their menus to accommodate the “je” or vegetarian dishes. No meat is allowed to be used even as “seasoning”. Cooks and Chefs are imaginative people and it is not uncommon for traditional Thai dishes to be tweaked and optioned to pass as a vegetarian dish.  Look for a yellow flag at the front entrance of restaurants. Where a yellow flag is unfurled, a vegetarian meal is available.

Note that the food is not really “je” as the food should have been prepared in the kitchen of a Chinese temple or affiliates and should have gone through a string of Buddhist rites.

Tourists can go anywhere in Thailand for the celebration. However, the biggest celebration is in Phuket. Rituals are “staged” in Phuket where several mah song beckon other spirits to possess them.  They pierce their tongues and cheeks with swords, flowers and other unusual items. It is said that these people do not feel pain and that after the rites, their bodies return to normal.

The vegan diet is recognize by thousands of doctors and goverment health departments as one of the most healthiest diets and one of the leading diets in disease prevention. It’s a shocking thought, then, to contemplate that a vegan diet can acutally make you sick,which can happen if you don’t follow proper direction. Protein – When someone is new to the vegan diet, they think that they would not get the right amount of protein from plant foods. This can be true if you do not where to get your calcium from plant sources. Our bones start to deteriorate when we reach the age of 30, so a good calcium intake is a must early on.

Vitamin B12 – This needs to be one of your biggest priorities as a vegan. Out of all the vitamins and minerals, vitamin B12 could be one of the most important vitamins and requires proper planning, as this vitamin is not abundant in plant food sources. A lack of vitamin B12 can bring memory loss, anemia, fatigue, behavioral changes and many more, so this needs your careful attention as a vegan

By being a vegan, you need to become more aware of the challenges and take some time to learn more about this diet. The benefits you can get by doing this right are amazing but not knowing how to do it can cause serious trouble in the future.
